I love food. It’s no secret. And I’m about 90% sure that you do to. I also love cooking and baking and making – it’s just so fun and rewarding!
I’ll be honest with you, the only reason why I’ve never done baking posts is because the lighting in my kitchen is absolutely horrible.
But, since it is the most wonderful time of the year, I thought I’d just gloss over that and make a baking post – for blogmas. 😊 (so, excuse the lighting…)

The Base/ The Batter
(half of the full measure – makes around 12 cupcakes)
120g self-rising flour
125g caster sugar
135g soft butter
2 large eggs (or 3 smaller ones, like mine)
1,5 tsp ginger
1,5 tsp cinnamon
3/4 tsp cloves
a pinch of salt
3 tbsp milk
1 tbsp golden syrup/vanilla extract
a tea spoon
a soup spoon/table spoon
a mixing bowl
a free standing mixer/a hand mixer/any kind of mixer
a muffin tray
festive cupcake liners (which, sadly I couldn’t find, but here’s a few examples)
OPTIONAL: If you don’t have caster sugar, like myself, use a machine to create dust/powder/caster sugar.
Before doing anything, feel free to pre-heat the oven to 170˚C.
The first step is to add the flour, cinnamon, cloves, salt and ginger into the mixing bowl. Then, also add the butter and the eggs. Mix (on minimum speed) until all the ingredients have combined. Then, feel free to turn up the speed for a bit. (around half a minute)
Next, add the golden syrup/vanilla extract to your milk and pour it into the mixing bowl. Mix on medium speed until you notice a battery, almost creamy texture. (feel free to use your spatula to scrape the sides of your bowl and see if there’s still some bits that aren’t mixed in properly)
Now, you just line your muffin tray and start ‘pouring’ equal amounts of batter in each slot. I used my table spoon and my tea spoon, but you can try an ice-cream scoop, if you’d like or/and your fingers.
Once all of that’s done, pop the cupcakes into the oven for 22 minutes. (on 170˚C)

Now, this is the part where you can get crazy!
I, however, couldn’t find any ‘super festive’ decorations. (which is quite sad… I was really looking forward to tiny red and green Christmas trees and mini gingerbread men… sigh… oh well!)
I opted for these white, silver and gold balls – they seemed quite classy and reminded me of the beautiful baubles that we’ll soon be seeing.
Even though I couldn’t find anything as festive as I maybe wanted to, I’m still happy with the way these turned out. 🙂
